Mushroom Chocolate Bars

A chocolate bar carries the same functional mushroom extract as a gummy does, set into chocolate instead of into fruit gelatine. The species are the familiar culinary and medicinal ones, reishi, chaga, lion’s mane and cordyceps, and none of them are psychoactive. What changes is the format, not the contents.

Chocolate suits mushroom extract better than most carriers do. The extract is bitter and earthy on its own, and cocoa is already both of those things, so the two sit together rather than fighting. A fruit gummy has to work harder to cover the same flavour, which is why gummies tend to be sweeter than they would otherwise need to be.

Every bar here is scored into squares. One bar is several servings rather than one, so the format works out cheaper per serve than a single gummy does, and it is easy to share or to split across a few days. The cost of that is having to decide how much a serving is, which a gummy decides for you.

All four bars carry the same blend at the same price, so flavour is the only thing separating them. Churro milk is the sweetest and most dessert like. Chocolate milk is the plainest, and the closest to an ordinary milk chocolate bar. Cookies and cream sits between the two, with the same biscuit note it has anywhere else.

Fruity cereal is the outlier and the one worth thinking about. It tastes like the milk at the bottom of a bowl of fruit cereal, which people either want immediately or do not want at all. If you are buying more than one bar, it is the one to add last rather than first.

Store bars flat, cool and out of direct sun. Chocolate blooms when it warms and re-sets, which turns the surface pale and chalky. Bloomed chocolate is still fine to eat and the blend is unaffected, but the texture goes grainy and it never quite comes back.
